A Must Try.....

I seriously had the most lovely day today. I got Stella and Troy off to training this morning and then sat in peace, had a cup of coffee, watched the morning news and caught up on some emails. At about 10 I moseyed out of the house for a 10:30 massage. It was AMAZING. Stopped by the boutique to check in and to drop off a few things, then the grocery store, an hour and 1/2 hike with Gus (it was 50 degrees and beautiful), an hour at the office, then dinner cooking time. I kept it simple tonight and made some chicken, broccoli and coucous. 
I found a recipe online that I've wanted to try so after dinner was prepped I went for it! 
Probably the simplest, yummiest, healthy soups I'm made in a while. Organic butternut squash soup. It only takes 5 ingredients, butternut, onion, fresh ginger, garlic, and chicken stock. 

Started off by chopping up 1/2 a white onion, about a fingers length of ginger and a clove of garlic. 

I sautéed the onions for a bit and then added the garlic and ginger for a few more minutes.  

This next step was the hardest part of all of it. Luckily the organic squash was on sale today (woot) so I bought a few extra so if this recipe turned out I could make some more. I pealed, gutted and grated the squash.  

Into the pot went the squash and 4 cups of chicken broth. Simple Truth Organic is my favorite. I let everything boil for 20 minutes. Let it cool for a few and then used my little handy, handheld bender to blend it all together.

Meaning To....

I've been meaning to post pictures of the finished wall at the office for a while now but it seems like every time I remember I'm either not near a computer or something else gets in the way. Well ...here it is, we decided not to do different patio layouts on top, those are going in a different spot but we did put some large slabs on top so we could display our furniture. Now, on to the next 1,000 different projects I have in mind for around here... only that's going to have to wait till tomorrow, the lil one is not feeling well so my mama went and picked her up from school and I'm heading to the doc with her in a few hours to get her checked out. Don't think it's anything major just chest congestion , runny nose but no fever. Nothing a little rest and TLC wont fix! I love the fact that everything is finally starting to turn green. Green makes every thing look better! :)

break #1....

Six weeks.....that's how long she has to have this thing on. It didn't happen playing pond hockey, it didn't happen skiing, it happen tripping down the sidewalk. I mean....REALLY!?!?! Much Love!

Ski Team!

A few weeks ago Stella started training with the Eldora Ski Team every Saturday. Now Saturday's can't come soon enough. I get up at 6 and get Stella up at 6:30 and we are out the door by 7. Usually we get up to Eldora around 8:30 after making a stop to get mama coffee and Stella and donut or two! :) By 9am Stella is ripping up the slopes with her coach (Dave) and 5 other little girls her age. She is having such a blast it's hard to believe we didn't do this sooner. I never noticed these signs before and thought it was pretty cool the ski area was showing some love to the local ski programs. Stella proceed to then inform me that they've been there for quite some time. Oops! :) Stella and two of her little ski buddies! Stella ripping up the GS course! At the end of the day which is usually at 3 all the kids have to help tear down the course. Stella is doing such an awesome job that it makes me one proud mama. Much Love!!!
